Our cuisine

We carefully select all fresh ingredients from small local producers for a light, contemporary take on Mediterranean cuisine which will delight both the eyes and the palate.

Our chef

Our dishes are designed by chef Alessandro Pascali, who gained international experience working with great Michelin-starred names such as Alain Ducasse, Carlo Cracco and Stefano Baiocco. After travelling the world, Alessandro has returned to his native Salento with a broader mindset and that unique blend of personality, precision, flair and creativity that makes each of his dishes a real surprise.

The locations

Two cosy rooms which can sit around twenty guests, where the warmth of the local stone perfectly complements the lamps, mirrors and designer furnishings. The soft colour palette is punctuated by the green of the elegant Kentia palms separating the round and square tables and the beige, yellow and dove-grey armchairs. In the airy bar room, with French doors and high ceilings, the illuminated bar counter stands out against the creamy stone arches.

In the center of the first room, the marble sculpture "La Liberté" by Jacques Zwobada, dated 1953, is testament to the romantic life story of Antonia Fiermonte – Fouad Giacomo and Antonia Yasmina Filali’s grandmother - who died prematurely at age 42.

The wine list

The Zéphyr Restaurant Wine includes local labels and a selection of wines from various Italian regions, as well as French champagnes.
