On March 10th at 12:00 PM, the stage of SPLASH 7 – Conversazioni Liquide at the Fiera del Levante in Bari will host the young talent Antonio De Carlo, chef at our Zéphyr Restaurant at La Fiermontina Luxury Home in Lecce. As part of the "Next Gen Top Chef" talk, the young chef will engage with other emerging talents from the Puglian food scene, sharing his journey and gastronomic vision. The event, part of Levante PROF 2025 for horeca professionals, is an excellence space dedicated to the world of hospitality and dining. The talk, created by foodteller Mario Bolivar Pennelli and moderated alongside Fabio Mollica, director of Amazing Puglia, will highlight the stories of chefs who are redefining the regional culinary landscape with passion, creativity, and innovation.

Born in 1996, Antonio De Carlo embodies the new face of Puglian cuisine: authentic, essential, but never trivial. Raised among pots and flavors, he honed his skills in Michelin-starred restaurants, developing a culinary philosophy that emphasizes the balance between ingredients and Eastern influences. Starting March 14th, Zéphyr Restaurant will showcase his signature cuisine: an intimate place surrounded by centuries-old olive trees and monumental sculptures, where each dish offers a unique sensory experience. His participation in SPLASH 7 will be an opportunity to discover the future of Puglian gastronomy through the talent and vision of a new generation of chefs ready to make their mark.
