Our cuisine is essential in its flavours and deeply rooted in the local territory. It draws on the rich biodiversity of both Salento and Morocco, embracing tradition and delving into culinary memory, while reinterpreting it through a contemporary lens. This approach is enriched by a spirit of cross-cultural exploration, leading Chef De Carlo to seek unexpected pairings between Puglian ingredients and French, Moroccan and Eastern flavours, in perfect harmony with the history and heritage of the Fiermonte Filali family.

The experience goes beyond dinner at Zéphyr Restaurant. Guests can also enjoy an aperitivo by the pool, surrounded by the centuries-old olive trees of La Fiermontina Luxury Home, accompanied by exquisite appetizers and signature cocktails; reserve a private dinner in the enchanting inner garden of La Fiermontina Palazzo Bozzi Corso; or take part in a cooking class and learn how to make traditional orecchiette in the kitchen adjacent to Bar Enzo.

In Morocco, at La Fiermontina Ocean, guests can also take part in cooking classes, learning how to prepare traditional recipes and cook tajine, couscous and other local specialties using fresh produce grown in the estate’s own vegetable garden.
